Chickpea Pulao/Kabuli Chana Pulao

Ingredients
  

  • 1.5 Cup Basmati Rice
  • 3 Cup Hot Water
  • 2 Tbsp Oil/Ghee
  • 1 Inch Cinnamon Stick
  • 2 Black Cardamom
  • 2 Bayleaves
  • 1 Star anise
  • 2 Dry Red Chili
  • ½ Tsp Cumin Seeds
  • ½ Tsp Ginger Garlic Paste
  • ½ Tsp Red Chili Powder
  • ½ Tsp Coriander Powder
  • ½ Tsp Garam mAsala Powder
  • Salt to taste
  • ½ Cup Potato,chopped
  • 1 Can/ 8 oz Chickpeas
  • Fresh cilantro for garnish
  • ½ Cup Whisked Yogurt.
  • ¼ Cup Cashew Nuts

Method
 

  1. Take a Pan. Add oil and heat it Add All the whole spices ,cumin seeds and dry red chili.
  2. Add ginger garlic Paste and sliced onion.Saute them till the raw smell is gone and slices look golden.
  3. Add all the dry spices ,salt and potatoes at this time. Saute for 2-3 minutes or till they looked cooked.
  4. Add chikpeas at this time and mix them.When the chickpeas looked cooked add whisked yogurt to the pan.
  5. Cook everything till the oil is released . At this time add washed and drained rice to the pan.
  6. Saute for one or two minute. Add hot water to the pan .Mix and cover the pan with a lid. Let it come to the boil and then switch the flame to low setting.
  7. Let the rice cook on slow for 12-13 minute.Switch off the flame after 13 minutes.
  8. Let the pan sit like this for 7-8 minutes.
  9. Remove the lid and fluff the rice with a fork.
  10. Enjoy with raita and salad.
