Cheesy Namakpare

Traditional Namakpare with Italian seasoning and parmesan cheese.

Ingredients
  

  • 2 Cups All purpose flour
  • 4 tbsp Oil/Ghee
  • Salt according to taste.
  • 2 Tb Grated Parmesan Cheese
  • 1 Tsp Herbs de Provence
  • 1 Tsp Dry Basil leaves
  • 1 Tsp Chili flakes
  • Oil for frying.
  • Warm water for kneading the dough.

Method
 

  1. Combine all the dry ingredients together and mix well.
  2. Add oil and mix nicely with your palm and fingers.
  3. It should be a crumbly mixture.
  4. Add warm water and start kneading the dough .
  5. Add water little by little. The dough should be firm .
  6. Cover the dough with a damp cloth or paper towel.
  7. While the dough rests,,heat oil in a wok or kadhai.
  8. Divide the dough into 2-3 bowls.
  9. Take a ball and roll out into a disc of same thickness.
  10. Cut into your desired shape.
  11. I have used cookie cutter .
  12. Keep the flame low to medium and and fry the Namakpare .Do not over crowd the wok.
  13. Drain the excess oil on the paper towel.
  14. Serve them with tea or coffee.
