Bulgur Salad with Tomato Cucumber and Chickpeas

Ingredients
  

  • 1 Cup Bulgur Wheat cooked in one cup of water
  • Cup Chickpeas
  • ½ Cup Cucumber
  • ½ Cup Cherry Tomato
  • ½ Cup Strawberry
  • ¼ Cup Green Pepper
  • ¼ Cup Red Pepper
  • Cup Cilantro
  • Cup Mint
  • ¼ Cup Onion
  • 2 Tbsp Walnut
  • 1 TBsp Cranberry
  • 1 Tbsp Pumpkin Seeds
  • ¼ Cheese Cubes(Optional)
For Dressing
  • 3 TBSP Olive Oil
  • 3 Tbsp Lime/Lemon Juice
  • ½ TSP Red Pepper Flakes
  • Salt to taste
  • ¼ Tsp Crushed Black Pepper
  • 1 Tsp Maple Syrup

Method
 

  1. Cook Bulgur Wheat according to the package instruction.
  2. Whisk the dressing by mixing everyting.
  3. Chop All the veggies.
  4. Combine bulgur wheat ,veggies and nuts in a big bowl.
  5. Pour the dressing over the salad.
  6. Mix everything properly for the salad to taste better.
  7. Enjoy.
