Ingredients
  

for making hollow potato jackets.
  • 4 Medium /Big Potatoes
For making stuffing
  • ½ Cup Grated Paneer
  • 2 Tbsp Crushed Pistachio
  • 2 Tbsp Chopped Raisin
  • 2 Tbsp Grated Mawa
  • 1 Tsp Chat Masala
  • 1 Tsp Red Chili Powder(According to your taste)
  • Tsp Garam Masala powder
  • Salt to taste
  • 1 Tbsp Fresh chopped Cilantro
For making the Curry
  • 3 Tbsp Ghee/Oil
  • 1 Medium onion
  • 1 Tbsp Ginger garlic paste
  • ½ Cup Tomato puree
  • 1 Tbsp Coriander Powder
  • 1 Tbsp Red Chili Powder(According to your taste/
  • Tsp Garam Masala Powder
  • ½ Tsp Turmeric Powder
  • ¼ Cup Heavy Cream
  • 2 Tbsp Grated Khoya/Mawa
  • 2 Tbsp Fresh chopped cilantro for garnish.
  • 1 Cup Hot Water

Method
 

How to make hollow Potatoes,
  1. Take medium size or large potatoes.Wash them or peel them .
  2. Boil them till they are 60 percent done.Make sure they still hold their shape.
  3. Take a small wok or Pan. Fill it with oil and let it come to the frying temp.
  4. Dry the boiled hollow potatoes with a paper towel and fry till golden brown.Keep the flame slow/medium.
  5. Remove them on a paper towel.
How to make the stuffing
  1. Grate paneer and mawa. Chop raisin ,crush pistachio .Mix everything properly to make a nice tasting stuffing.
How to fill the potato
  1. Fill the stuffing inside with the help of a small spoon or finger.
  2. After stuffing keep the potatoes inside the fridge till we make the gravy.
Making of gravy /curry
  1. Take ghee in a heavy bottom pan or wok.
  2. Add chopped onion and ginger garlic paste to it.
  3. Saute till they look golden and soft.
  4. Add all the dry spices and tomato puree to the pan.Saute for a few minutes till the oil seperates.
  5. Add water at this point and let it cook for some time.
  6. Now add grated mawa and heavy cream. Mix and let it cook for another 2-3 minute on low flame.
  7. Add crushed kasoori methi and chopped fresh cilantro.
  8. Switch the gas off .
  9. Pour the curry /gravy on a platter, arrange sliced potatoes and garnish and decorate them properly.
  10. Enjoy !!
