Asian Cucumber Salad. Crunchy, fresh summery cucumber salad with a hint of garlic and chili oil. Super easy to prepare, this salad is a wonderful twist with spices, which makes it anything but boring. Additionally, it is vegan and gluten-free.

Ingredients
  

  • 1 Big long English Cucumber
  • ½ Tsp Salt
  • 1 Tbsp Chili Oil
  • 1 Tsp Sesame Oil
  • 2 Cloves Garlic ,grated
  • ½ Tsp Sugar
  • ½ Tsp Korean Chili Powder/Any Red Chili Powder
  • 1 Tsp Apple Cider Vinegar
  • 1 Tbsp Sesame Seeds

Method
 

  1. Slice cucumbers and mix them with salt.
  2. Keep it on the counter for 10-15 minutes. It will release some water. Drain the water.
  3. Mix everything except cucumber and salt.
  4. Drizzle this chili oil mix on sliced cucumbers.
  5. Mix them well. Chill in the fridge and enjoy.
