Ingredients
  

  • 8-10 Pointed gourd(Parwal)
  • 2 Medium Potatoes,peeled and cut into big chunks.
  • 1 Small Chopped Onion
  • 1 Tbsp Ginger Garlic Paste
  • 4 Tbsp Cooking oil
  • 2 Small Bay Leaf
  • 2 Small Green Chilies
  • ½ Tsp Asafoetida Powder
  • ½ Tsp Turmeric Powder
  • Salt to taste
  • 1 Tbsp Kashmiri Red Chilli Powder
  • 1 Tsp Ground coriander Powder
  • 1 Tbsp Tomato paste/Puree
  • 1 Tbsp Whipped Yoghurt
  • 1 Tsp Indian Five Spice (Panch Phoran)
  • 1.5 Cups Hot water

Method
 

  1. Shallow fry Parwal and aloo till they look golden brown .
  2. Keep aside and add bay leaf ,panch foran and green chilies to the pan.Add asafoetida to it as well.
  3. Add chopped onion and saute till translucent.
  4. Add ginger garlic paste .At this time add red chili powder,turmeric powder,coriander powder and little bit of hot water to the an or wok.
  5. Saute on low flame for 4-5 minutes.If its sticking to the pan or burning add one spoon of water again.
  6. Add tomato paste /puree and whipped yoghurt .Saute till it releases oil.
  7. Add fried parwal and aloo to the spice paste.
  8. Mix them properly and cover them for 2-3 minutes.Cook and cover for next four five minutes something
  9. Add water and let it come to a boil on the stove.
  10. Cover and cook for low flame.
  11. Taste the seasoning and remove the curry till it reaches the consistency of you liking.
  12. Enjoy with rice ,roti ,paratha and poori.
