Orzo with Mushroom and Spinach

Orzo salad with caramelised mushroom, garlicky spinach, fresh edamame and tangy feta. What could be better folks? This orzo with mushroom and spinach is a perfect lunch, dinner, or picnic side dish.

- 1 Cup Uncooked Orzo Pasta
- 2 Cup Spinach Leaves, chopped
- 1 Cup Chopped Mushroom
- 2 Cloves Chopped Garlic
- ⅓ Cup Edmame
- 1 Tbsp Olive Oil
- ½ Tsp Red Pepper Flakes
- ½ Small Chopped Onion
- 2 Tbsp Crumbled Feta Cheese (Vegan or Your choice)
- Salt for boiling the orzo pasta
- ½ Tbsp Lemon Juice
Bring a large pot of salted water to boil. Cook orzo pasta according to package instructions.
Drain and wash the pasta with cold water. Drain again. Mix a few drops of oil into the pasta to prevent sticking.
Heat olive oil in a pan.
Add chopped garlic, onion, and mushroom till they caramalise.
Remove from the pan and keep aside. Saute spinach in the pan till it looks wilted. Add edamame and cook them with spinach.
In a serving bowl mix cooked orzo, wilted cooked spinach, caramelised onion, garlic mushroom and edamame.
Add crumbled feta, red pepper flakes, and lemon juice .
Mix everything together.
Serve and enjoy.
