What Ingredients Do You Need for Veg Peanut Noodles?
Noodles-I used fettuccine, but you can use spaghetti or Thai rice noodles. Additionally, using whole wheat noodles will make this dish more filling and nutritious.
Vegetables- I have used English cucumbers, carrots, colored peppers, and purple cabbage. Their textures are crispy and crunchy which go well in the noodles.
Peanut Butter-I have used smooth peanut butter, but chunky is good too.
Soy Sauce-I have used dark soy sauce. I like the flavour profile much better in dark soy sauce.
Red Chilli Sauce-I have used store-bought Thai red chilli sauce.
Can You Store Veg Peanut Noodles?
They taste great as leftovers. You can store them in a glass container. Firstly, heat them in the microwave before serving the next day. If the consistency of the sauce looks too thick the next day, add just one tbsp of hot water before heating it. Mix properly and serve.
Veg Peanut Noodles
For Peanut Sauce
- ¼ Cup Peanut Butter(Chunky/Creamy)
- 2 Tbsp Soy Sauce
- 2 Tbsp Red Chilli Sauce
- 1 Tsp Lemon /Lime Juice
- 1 Tsp Sesame Oil
- ¼ Cup Warm Water
- 1 Tbsp Red Pepper Flakes
- 6 Oz Fettuccine /Spaghetti Noodles(boiled perfectly)
- ½ Cup Thin Carrot Strips
- ½ Cup Carrot Sticks.
- ¼ Cup Purple Cabbage thinly sliced
- ½ Cup Colored Peppers, thinly Sliced
- ¼ Cup Fresh Cilantro Leaves.
- 1 Tsp Oil
- Lime Wedges.
How to prepare Sauce
- Whisk everything written under Thai Peanut Sauce .Make it perfectly smooth and right consistency by adding warm water.Your sauce is ready.
How to prepare Veg Peanut Noodle
- Take a pan.Add one tsp of oil to it.
- Add Carrot and stir it for one minute till it cooks .Add cucumber sticks ,colored pepper sticks ,and purple cabbage.Stir it nicely for 30 seconds and add boiled noodles to it .
- Mix Peanut sauce to the vegetables and Noodles .Toss everything together and serve.You can eat them cold or hot both.
