Aloo Palak/Potatoes in Spinach Gravy

Crispy potatoes simmered in tangy ,creamy spinach gravy.

  • 4 Cup Fresh Spinach Leaves
  • 6 Small/Medium Potatoes ,Boil and cut into two piece.
  • 1 Medium Onion ,thinly chopped
  • 1 Tsp Chopped Ginger
  • 1/2 Tsp Chopped Garlic
  • 1 Tsp Ginger-Garlic Paste
  • 1 Tsp Cumin Seeds
  • 1 Dry Red Chillli
  • Pinch of Asafoetida
  • 1+2 Tbsp Mustard Oil /Ghee/Oil of your choice.
  • 1 Tsp Coriander Powder
  • 1 Tsp Dry Mango Powder
  • 1 Tsp Red Chilli Powder
  • 1/2 Tsp Garam Masala Powder
  • 1.5 Tsp Besan /Gram Flour
  • Salt according to the taste.
  • 1 Tsp Turmeric Powder
  • Cream For Garnish(Optional)
  • 1 Tbsp Fresh Cilantro Leaves.


  • Boil Potatoes till they are still firm and fork tender.(use 1 tbsp of potatoes while boiling the water . It will infuse little salt in potatoes ,other wise it will feel bland.
  • Cut them into two halves. Keep them aside.
  • Wash Spinach leaves and and dip it into hot water .Prepare a bowl full of cold ice water and drop it immediately into cold water. This process is called blanching.
  • Make a smooth puree of these blanched spinach leaves. Do not use any water while making this. It should be a smooth gravy .Keep it aside.
  • Take a wok /Pan. Add 1 tbsp oil to it. Pan fry Potatoes till they look crispy and light brown. Remove them from pan and keep them aside.
  • Take the same pan again .Add rest 2 tbsp of oil(you can reduce the quantity ,if you want).Heat it.
  • Once its hot add cumin seeds and dry red chilli to it .Add asafoetida to it .
  • Add chopped onion ,and garlic to it .Saute it on medium/low flame.
  • Once they look little transparent add ginger garlic paste to it .
  • Saute it for 2-3 minute .Add turmeric ,coriander powder, red chilli powder, dry mango powder and gram flour at this stage .Saute it on low flame for 4-5 minutes.
  • Add ginger to it .Mix it nicely.
  • Add potatoes and mix it with all the spices really well. Saute for 1-2 minute.
  • Add spinach puree to it .Add salt (according to your taste).
  • Cook it for 1-2 minute .Do not cook it long ,otherwise your spinach will turn black. Add garam Masala now. Mix it well.
  • If you want to add cream ,mix now.
  • Taste the Curry and adjust the seasoning .
  • Garnish with Cilantro leaves and serve.
  • Tastes best with Naan ,Roti or Kulcha.
