



Classic Indian desserts are great on their own and they don't need any thing else to make them shine. However ,when you combine two flavors together,you create a dish that stands out in the crowd.
I love Cheesecake and Gajar ka Halwa, both with the same intensity.
So, I thought of putting a twist on these desserts and making a No Bake Gajar Ka Halwa Cheesecake.
The final product was just mindblowing.
Ingredients for Carrot Halwa
Carrot -2 cups grated
Sugar -½ cup
Ghee/Clarified butter-2 table spoon
Mawa or Mawa powder-½ cup
For Cheese cake
graham crackers (or biscoff cookies)- 8 -10
Butter-3tbsp cold
Cream Cheese- 2 packs of 8 ounces each
Heavy whipping cream- 1.5 cups
Sugar-2 table spoon. (I made it less sugary if you want more sweet please add according to your taste.)
Lemon juice -1 table spoon.
Rose essence-1 tsp


Method
For Carrot Halwa
Heat Ghee (Clarified butter) in a pan.
Add carrot.
Saute it on low flame for 7-8 minutes or till it gives a nice aroma and water is reduced.
Add sugar and saute for another 6-7 minutes. It will be little liquid-like first but on a slow flame you have to continuously stir it to thicken it.
Add Mawa powder and then saute for couple of minutes again.
Check to see if all the moisture has dried up and then switch off the flame and keep it aside to cool down.
Cheese Cake
Crush the digestive biscuit and cold butter using a food processor or your fingers.
Mix it well. It should be crumbly.
Take a spring form pan and set the biscuit crumble using a spoon or your fingers.
Keep it in the fridge for at least an hour.
Whisk the whipping cream till you get a stiff peak.
Whip cream cheese in a separate bowl.
Fold whipped cream into cream cheese.
Add sugar and lemon juice.
Now bring the spring form pan and layer the Carrot Halwa as your second layer .
Using your finger tip or a spoon press it down tightly. Remember you need to set it .
Add the cheese mixture as your top layer. Smooth the top out and let it sit in the fridge for 4 hours or overnight. It needs to set properly otherwise when you remove the pan the cake will break or come out badly.
Decorate it with pistachios and rose petals before serving.
Note-you can do Gajar ka Halwa as the top layer too,if you like.
