Today school was closed, so the kids were at home. My daughter was down with a cold, so before preparing lunch, I asked her what she wanted to have for her meal. Since my son had a party in the afternoon, she decided that she will have mac and cheese. Both my kids love cheese, though mac and cheese is my daughter’s favourite. Usually, she wants to eat store-bought mac and cheese, but here the rules of the game are changed in my house. So I thought of making it from scratch for my youngest. I really felt awesome when my daughter who doesn’t eat much, finished her plate in no time. Happy kid equals to happy mum. Isn’t it?
The recipe is super simple and I did not use all purpose flour for thickening the sauce. I thought it didn’t make any difference in the final product.
Elbow Macaroni -1 1/2 cup
Sharp cheddar cheese-1/2 cup
Italian blend cheese-1/2 cup
Italian seasoning -1 teaspoon.
Butter-1 +1 table spoon.
A pinch of red pepper flex.
Salt – to season the boiled pasta.
Black pepper (crushed)-A pinch .
Garlic cloves-2 ,chopped fine.
Boil elbow macaroni in sufficient salted water. Keep it al dente.
Pre- heat oven to 350f.
In a pan add 1 table spoon of butter.
Add garlic cloves.
Add milk mixed with cheese.
With a whisker keep stirring it on medium flame.
Add all the seasoning.
When it starts thickening add pasta to it.
Stir for 2-3 minutes.
Transfer in to a baking dish.
Sprinkle some cheese on the top .
Sprinkle one table spoon of butter on top of it.
Bake it for 15 minutes and when it starts bubbling just increase the oven temperature to 400 f ,till it gets some beautiful colour.
Serve hot .
