Chipotle-style Burrito Bowl

Well, today I am going to share the freshest and most economical way to make a Chipotle-style burrito bowl. Frankly speaking, I just love the concept of Chipotle, freshest of the ingredients, a very informal setting, and you can choose whatever you want. On top of that, it’s super pocket-friendly. Here I have a confession to make; several years back when I tried Chipotle, I didn’t fell in love instantly. It took me some time to develop the taste buds and then I thought, “Why shouldn’t I try to create a burrito bowl which is as per my liking?”. So, I incorporated many spices of my choice and removed what I didn’t like. It is fun to do at home and you can involve kids too. So in recent years, I have developed a recipe which is our family favourite and really easy to make.

Lemon Cilantro Rice I have made 2 cups of white basmati rice in a rice cooker and added four tablespoons of lemon juice and two tablespoons of cilantro with 1/2 teaspoon of salt in it. Mix it with the help of a fork, and you are good. 

Grilled Chicken   Take two chicken breasts and marinate it with one teaspoon each of turmeric, salt, chilli powder, ginger garlic paste. Here, I also added a twist by adding 1 tablespoon of peri-peri spice mix and one tablespoon of oil. Marinate this for around one hour and bake it in the oven for 350 F for 40 minutes. Time can vary depending on your oven and the chicken piece.

Salsa-Take one medium-size red onion, one medium tomato, 1/2 cup of fresh cilantro, and one small jalapeno. Put it into a food processor and chop it finely. Make sure it’s still a little chunky. Mix a tablespoon of lime juice and 1/2 teaspoon of salt. Your salsa is ready.

Guacamole-Take 3 ripe avocados and mash them. Add one tablespoon of onion, one tablespoon of tomato, one tablespoon of fresh cilantro, one tablespoon of green chillies and two tablespoons of lime juice and salt. Mix everything together and the guacamole is done.

Black beans-You can certainly use red kidney beans or rajma. Boil the beans in salted water and season with garlic powder, and a pinch of salt.

Sweet Corn —Take a can of American sweet corn. Mix one tablespoon each of cilantro and lemon juice. Add some salt and voila! It’s ready.

Sour cream /greek yoghurt—Depends on your preference. Greek yoghurt is an amazing replacement and personally, I like it better then sour cream.

Sweet peppers and onion- Cut everything into long thin slices. In a pan take one teaspoon oil and saute for 3-4 minutes. It’s done.

Now is the fun part of assembling everything together. Do this however you wish, but make sure to relax and sit back with your bowl. I am sure that you will love your homemade burrito bowl more then Chipotle.

Note-If you want to avoid rice, use quinoa or cauliflower rice. The flavour will still be amazing.
