Nothing is more comforting than soup after school on a cold and gloomy day. If the soup is full of veg goodness then we are not only nourishing our soul, we are doing the same to our body.
Today I made this delectable soup, which is very comforting, healthy, and light on your digestive system. One great thing about this recipe is that you can use your favourite vegetables, legumes, and even pasta.
This is a great recipe for people who are watching their weight and at the same time, don't want to starve themselves. Believe me, it's so good in taste that you will be hooked to it and will make this again and again.
Coming straight to the recipe---
Carrot -2 medium sized diced
Onion-1 medium diced
Garlic-3 diced
Green onion-½ cup
Sweet corn -⅓ cup
Soaked Chickpeas-⅓ cup
Canned Tomato -4 oz
Elbow pasta-⅓ cup raw
Bay leaf-2
Dry /fresh thyme- a few
Dry chilli flakes-pinch
Black pepper-pinch
Parmesan cheese -for garnishing
Lemon juice for garnishing.
You can make this soup in instant pot/dutch pan.
In a pressure cooker add one tablespoon of olive oil.
Add bay leaf.
Add onion and garlic. Saute for 1-2 minutes.
Add all the other vegetables and saute for 2-3 minutes.
Add tomato puree.
Add pasta.
Add three cups of water.
Pressure cook till three whistles.
Open the lid once it is cooled down.
Add thyme, black pepper and chilli flakes.
Garnish with parmesan cheese and lemon juice and serve hot.
