Few rice dishes are so full of flavour that one spoon gives your taste buds an amazing kick. Veg Mexican fried rice is one of these. Lip smacking tastewise, this is a colourful and awesome dish which you can cook in no time. You can use whatever veggies you want to use or replace this with chicken. Serve this with sour cream or just lemon. This will just shine in your list of one pot meals.
Ingredients---
4 cups of cooked fluffy rice. (we don't need sticky rice)
Red pepper chopped in the medium size-⅓ cup
Yellow pepper chopped in the medium size-⅓ cup
Medium onion-chopped fine
Corn kernels(frozen or canned)-½ cup
Cherry tomatoes-⅓ cup, cut into halves.
Garlic cloves-4 chopped nicely.
Spring onion-½ cups
Jalapeno-¼ cup
Cilantro-½ cup
Lemon juice-¼ cup
Taco bell seasoning-1 pack/pouch
Oil-2 tablespoon
Recipe-
Take a pan.
Add oil.
Add onion and garlic.
Saute for 3-4 minutes. When its pink just before browning add peppers and corn.
Saute for 3-4 minutes.
Add Taco Bell seasoning.
Mix for 2-3 minutes.
Add jalepeno, cilantro, tomato and lemon juice.
Add salt.
Taste it and adjust the seasoning.
Garnish with cilantro, lemon, jalapeno and serve.
Note- If you want to use Beans or chicken you can add to it.
