Who doesn't like cheesecake? This silky smooth Mango cheesecake is a delight of any dessert lover. This is a no-bake eggless cheesecake and quite easy to make. The goodness of mangoes combined with the tanginess of cheese feels like a party in your mouth.
So for this Diwali make this easy no-bake eggless Mango Cheesecake for your friends and have a great time together.
Ingredients-
Graham crackers/digestive biscuit/any other plain biscuit-20
Butter-4 table spoon melted/around 50 grams
Cream cheese-2 packs(225g each)
1 cup -mango puree to mix with chesse+1and ½ cups for the glaze. (I have used canned mango you can use the fresh one if available.
Gelatin -1 pack(5 to 6 grams) You can use agar-agar to make it fully vegetarian.
Method-
Take all the graham crackers and crumble it in a food processor or blender.
Melt the butter and mix the crumbly mixture with the butter.
Take a springform pan and butter it nicely.
Transfer the prepared mixture into it and press the bottom with a big spoon or flat bowl to make crust layer smooth and tight.
Keep it into the fridge for 45 minutes.
Soak a packet of gelatin which is around 6 grams into ½ cup of hot water. Mix it till it dissolves nicely and looks transparent.
Take all the cheese in a big bowl and with help of electric or hand beater make it fluffy.
Add 1 cup of mango puree into this mixture.
Mix it nicely. Add ¾th part of gelatin in this and mix well.
Pour this in the springform pan over the cookie layer.
Keep it in the fridge to set well.
Start making the glaze.
In a pan take one and a half cup of mango puree and mix with rest of the gelatin.
Cook it for 4-5 minutes till it starts to thicken.
Let it cool for 4-5 minutes and then pour the still warm glaze on top of cheesecake layer.
Let it set and the best way is to keep it in the fridge for overnight.
Remove from pan and decorate with the topping of your choice or eat it plain. I am sure you will love it.
