Who doesn't love Palak Paneer? It's cottage cheese cubes /Paneer in creamy, spicy spinach gravy and this is so flavourful that people who are not a big fan of spinach also eat with utmost delight.
At my home both my kids love to eat this and is one of their favourite vegetarian gravies. After a long time of cooking it traditionally a few years back, I developed a recipe which is foolproof, easy and gives beautiful texture and colour. So do try this and see for yourself...
INGREDIENTS-
Fresh Spinach-6 cups
Paneer/Cottage cheese cubes-1-½ cup
Medium onion-1
Tomato-1
Garlic cloves-4
Ginger-1 small piece
Green chilli/red chilli-2
Kashmiri red chilli powder-1 teaspoon+1 teaspoon for tadka
Turmeric-1 teaspoon
Asafoetida/Hing- A pinch
Cumin seeds-1 teaspoon
Ghee or butter-1 tablespoon +1 tablespoon for tadka
Salt -according to taste.
Method-
Take a pan/wok
Add oil/ghee/butter
Add onion
Add ginger & garlic
Add tomato
Add spinach
Saute for 5-6 minutes till all the veggies are cooked.
Cool it down
Grind it
Take a pan
Add all the spinach paste.
Add red chilli powder, turmeric and salt.
Saute for 3-4 minutes.
Mix paneer cubes.
Saute for 2-3 minutes.
Tadka-
In a small tadka pan, add ghee/butter
Add asafoetida.
Add cumin seeds
Let it crackle
Pour it over the paneer
Sprinkle some chilli powder.
Serve it with a side of your choice.
