Focaccia with Black Olives and Cherry Tomatoes

Since we are doing Navratri fast at home, I am making food only for kids. Mostly easy and different types of food which they love to eat. Though this morning I was in the baking mood, I was not very sure how my yeast will react in this weather. It was really gloomy, fall type weather. Baking normally doesnt give desired results in this type of weather… Because I wanted to bake something I still went ahead with my plan and started making the dough. In the process, I was really pleased to see that my yeast was working and my dough has wonderfully risen. Another one hour and my Foccacia was on the table for the kids. They usually like to eat by dunking it in extra virgin olive oil and just out of the oven this wonderful Foccacia was perfect for that.


All-purpose flour—3 and 1/2 cups f flour

Yeast-1 sachet

Salt-a pinch

Olive oil-1/3 cups

Honey – 2 teaspoon

Water -1 and 1/2 cup


Warm the water.

Mix packet of yeast in this.

Leave for 5 minutes.

Mix flour with salt.

Add honey into the yeast mixture.

Make the dough with the help of yeast mixture.

Add olive oil.

Make dough really smooth and shape a ball out of it by tucking it.

Keep it into a warm corner for 45 min to 1 hour.

Take a baking tray and spread one table spoon of olive oil.

Spread the dough on the tray.

Pinch the dough with your two fingers.

Arrange the cherry tomatoes and olives on it.

Spread one table spoon of oil on top of it.

Sprinkle some dried rosemary leaves.

Bake on 400 f  for around 20 minutes, till the top, comes out golden brown.

Your Foccacia with the awesome crust is ready to eat.
