Few weekend mornings are lazy and laidback. You seldom feel the urge to cook something elaborate but sometimes you have to think of something so you can make breakfast special without breaking a sweat.
At home, my kids are not normally very enthusiastic about these chillas so the best solution is to give them something which they really love to eat. Yes, you are absolutely right, the solution is paneer.
So when I stuffed this chilla with paneer and a veggie mixture they had their breakfast without complaining. This is an awesome protein packed breakfast which is really simple to make. So friends if you are not already making it please do try. I am sure that you will love it.
Coming straight to the recipe—-
Moong daal or split yellow moong beans-2 cups
Red Pepper-1/2 cup
Yellow Pepper-1/2 cup
Paneer (crumbled) -1 cup
Green onion /Scallion-1/3 cup
Ginger -1 teaspoon
Green chilli-1 teaspoon.
Salt -1/2 teaspoon or according to taste.
Cilantro/coriander leaves-1/3 cup
Soak moong dal or yellow lentils for 2-3 hours.
Grind it with 1/2 cup of water.
Add salt, turmeric and mix with a spoon.
The batter should be flowy to make the crepe. it shouldn’t be thick or thin.
Take a pan and:
Add one tablespoon of oil.
Add onion, ginger, garlic and green chillies.
Saute for a while and then add peppers.
Add paneer and saute it for 2-3 minutes.
Now add lemon juice, scallion, salt and cilantro to it.
Your filling is ready.
Take a griddle or non-stick pan .
Take a ladle or big serving spoon. Spread two spoons of batter and spread it on the griddle.
Leave it for 2-3 minutes then brush the chilla with the oil.
In another two-three minutes, you will feel that its getting golden brown in colour.
Take the filling and spread on one side of the chilla. quantity depends on how much you like. There is no rule.
Roll the chilla. Serve with any chutney/ Dip of your choice.
