We always have leftover bananas on the kitchen counter. They are unripe and nobody wants to eat them. The recipe which I am going to share with you today is a wonderful way to use those unwanted bananas to make something delicious. These muffins are great for an on the go breakfast or snacks. This is one easy recipe and will not take more then 20 minutes. Do try and let me know the results.
ingredients----
2 cups of All purpose flour
¾ cups of sugar
½ cup of quick cooking oats(you can use steel cut also but that will give you a little texture)
¾ teaspoon of baking powder
¾ teaspoon of baking soda
pinch of salt
¼ cup of cranberries
⅓ cup of canola oil
1 and ¾th of a cup of mashed banana. (2-3 Whole Bananas)
Method--
Preheat oven to 375f
Mash the bananas with a fork. Add oil and sugar to it.
Mix all the dry ingredients together.
Add the mixed dry ingredients to the wet ingredients.
Mix it gently.
Add Cranberries to the mixture.
Line muffin liners with butter or oil. If you are using silicone cups you don't have to do anything.
Pour until the muffin liner is ¾th full.
Bake for 15 -20 minutes.
Check with a toothpick.
Cool on a wire rack.
Munch on it.
