

Autumn is knocking on our doorstep. The air is not yet crisp and cold but a person like me loves everything about this season and cannot wait long. Before falling to the ground, leaves are always dressed in their prettiest and most colourful outfits. All of nature comes alive with the brightness of colours. The nips in the air and fragrant maple and birch leaves make our surroundings so pretty that it can't be explained in words. But for that, I guess I have to wait for a few weeks.
The labour day weekend always announces the official arrival of fall and to start this relaxing long weekend, my kids raised their hands for not going anywhere saying that they are too tired to go out so they would rather just stay home and chill.
So on that relaxing note, I baked the classic apple pie to celebrate the arrival of Autumn/Fall. Try this at home and you will love this with a dollop of ice cream.
Recipe for the crust.
2 and ½ cups of all-purpose flour.
1 and ½ stick of cold butter
Pinch of salt
Cold Water (just a little)
Mix salt with flour with the help of a fork.
Cut butter into small pieces and mix into the flour with the help of fork and fingers.
Add just a little water and knead it gently.
Divide it into two balls, keep it covered into cling wrap in the fridge for 45 minutes.
Apple stuffing--
4 big granny smith apples
Peel apples and cut into fine pieces
1 teaspoon cinnamon powder
½ cup brown sugar
⅓ cups of all purpose flour
Mix everything together.
Preheat the oven at 425f
Take out the flour balls from the fridge.
Take the first ball, roll out into a big circle, make it big enough to cover a 9''pie pan
Take a pie dish, I thought about doing something different and used a tart pan and the result was amazing.
Cover pan with rolled dough.
Fill it with apples.
Take the second ball, repeat the same step again.
Cover the pan with this. Seal the edges properly. Make a slight cut mark to release the steam.
you can design it in creative ways but I was really busy so couldn't do so.
Bake this on 475f for 10-15 minutes then lower the temp to 375f and bake for 25-30 minutes till golden brown on top.
You brush little milk on the top to help this getting the right colour.
Enjoy this with a scoop of vanilla ice cream or just the slice of pie. This will make you a big fan of the classic American desert which is nothing else but Apple pie.
