The last week of summer vacation. Kids are getting into the mood of a new school year. Still cannot believe how fast these two and half months went by. For a few days, my son was asking me to make schezwan fried rice. This morning when I woke up it was a little gloomy. Good food cheers up a person so I thought that it was a perfect time to make that spicy, garlic flavoured colourful veg fried rice. Texture and colour both are to die for and the taste, pure bliss. My daughter who is a picky eater finished this in no time. Please do try this. It is simple, easy and makes a wonderful lunch/dinner.
Recipe--
4 cups of cooked rice
⅓ cup of red bell pepper
⅓ cup of yellow bell pepper
⅓ cup of carrot fine long strands
⅓ cup of sugar snap peas
½ cups of scallion or green onion.
¼ cups of jalapeno
4-5 cloves of garlic finely sliced.
4 tablespoons of homemade schzewan sauce (will share the sauce recipe in my next blog post.you can use store bought too)
1 table spoon vinegar
1 table spoon of soya sauce
In a wok add two table spoon of oil.
Add garlic and then add all the vegetables. Saute them.
Then add schezwan sauce. Saute for few minutes.
Add rice and soya sauce.
Add some of green onion and jalapeno.Mix well. serve hot.
On my kids' demand, I served this with Schezewan chilli potatoes fries. The recipe of which I will serve in my next blog post.
